I’m totally normal. I think it’s obnoxious when people demand limos or bodyguards. I eat at McDonalds or Taco Bell. My parents have always taught us to be humble. We’re not spoiled.

I will be the first to admit, I love a good Taco Bell Breakfast Crunchwrap on the weekends. Anytime I can combine all my favorite breakfast foods into a tortilla pocket, I am a happy girl.
I am also pretty sure I knew that my guy was the one for me when we bonded over our love for Taco Bell when we first met. This was also back when they did the Southern Breakfast Crunchwrap that had sausage gravy, eggs, hashbrown, cheese & sausage in the wrap.
Got to love the south & their gravy obsession.
My copycat TB breakfast quesadillas were created in attempt to save my wallet a few bucks when I am craving Taco Bell & already have all the ingredients at my house. BONUS: it is a great travel meal as well. You can easily cook the eggs & protein the night before, store in the refrigerator overnight & heat them up in the morning for an on the go breakfast!
Any protein works in these copycat TB breakfast quesadillas.
There is definitely no discrimination when it comes to breakfast food proteins. Sausage patties, steak, chicken, bacon…whatever you crave will work!
The key to a happy well fed stomach is LOTS OF CHEESE. I added cheese before adding all the ingredients onto the tortilla and then again at the end to make it extra delicious!

I am currently salivating looking at these pictures writing this post… I definitely think more copycat TB breakfast quesadillas are in my future!
- 2 tortilla, burrito size
- 4 eggs, large
- 4 bacon, slices
- 1/3 cup cheese, cheddar
- 1/8 tsp cilantro
- salt & pepper, to taste
Cook bacon. Either by skillet until crispy or in oven at 350 degrees for 15 minutes. Once cooked, break into pieces.
Into small bowl add eggs. Using fork, whisk them together until yolk is combined. Add salt & pepper to taste.
Heat non-stick pan to medium heat & slowly cook eggs until fluffy. Set aside in bowl once cooked.
Lightly spray non-stick pan with cooking spray (like PAM), set to medium heat.
Into pan, add tortilla. Next add cheese, eggs, cilantro, bacon & top with more cheese.
Starting at one end of the tortilla, fold sides in creating spiral until all sides folded together & no food can be seen. Flip tortilla onto other side to let the folded side cook.
After 1-2 minutes remove quesadilla from pan, slice in half & serve. Enjoy!
You can also make your quesadilla meatless or add any other cooked protein in. Enjoy whatever variation you prefer!
