I’m all about some burrito bowls & corn salsa so thats the same thing right?
Recently I have been craving salmon.
While this is not uncommon, salmon is my go to protein when I am eating out, I just typically do not cook it at home for myself. Fresh salmon is typically expensive at the grocery store & so I save it for special occasions.
This time though I wanted to change up the protein and add a little spice to it. 1) Who would have ever thought that salmon would go perfectly with a burrito bowl? 2) Giving your salmon a quick spice rub before sautéing it is life changing!
This Spicy Salmon Burrito Bowl is about to be added into my meal circulation & I bet you will want to do the same. Between the spicy salmon filet, the freshness of the corn salsa, the delicious cauliflower rice & creamy dressing to top the bowl, this bowl is perfection!
First, make your corn salsa.
You want to be able to give this salsa time to marinate while you are prepping your cauliflower rice & salmon. (I even through it in the refrigerator for a few minutes to cool. I loved the contrast between the cold salsa & warm rice, but could just be a me thing!)
To make the salsa, add all of your vegetables into the bowl first. This salsa incorporates tomatoes, fire roasted corn, black beans, red onions & jalapeños. Give them a good stir then add your lime juice, lime zest, cilantro and garlic powder. One more quick stir to combine all the flavors then let your salsa rest.
Now for the spicy salmon filets.
I made this quick spice rub by combining cumin, salt, pepper, chili powder, coriander & paprika.
Mix the spices together, generously rub it on both sides of the salmon filets & pan-sear the fish on both sides for 4-5 minutes until cooked through.
I cooked my cilantro lime cauliflower rice at the same time as my salmon so they would finish simultaneously.

How to create your Salmon Burrito Bowl:
First, add your cilantro lime cauliflower rice.
Next add your spicy salmon filet.
Next your corn salsa.
Finally top with creamy cilantro lime dressing. This dressing adds a cooling factor to the dish. It tastes amazing with spicy salmon as well as mixed in with the cauliflower rice!
This salmon burrito bowl is a fun twist on your favorite Mexican dish. It is light, flavorful & will be enjoyed by anyone you make it for. I hope you enjoy it as much as I did!
ENJOY!
- 2 filets salmon, de-skinned
- 1/4 tsp paprika
- 1/4 tsp chili powder
- 1/4 tsp ground cumin
- 1/4 tsp corriander
- salt & pepper, to taste
- 1/2 cup corn I used canned mexican corn
- 1/2 cup black beans
- 1/4 cup tomatoes, diced
- 2 tbsp red onion, diced
- 1/2 tbsp cilantro, chopped
- 1/4 tsp garlic powder
- 1/4 jalapeno, diced thinly
- juice of 1 lime
- Cilantro Lime Cauliflower Rice (recipe below)
- Creamy Avocado Cilantro Lime Dressing (recipe below)
- optional: avocado, sour cream, cheese

Into a bowl add corn, black beans, red onion, jalapeno & tomatoes.

Add in chopped cilantro, garlic powder & lime juice. Stir all ingredients to combine. Set aside until ready for use.

Into a small bowl combine coriander, cumin, chili powder, paprika, salt & pepper. Stir to combine.

Evenly divide & apply spices to both sides of your salmon filets.

When all other parts of the bowl are completed heat a non-stick pan over medium-high heat. Cook salmon for 3-5 minutes on each side.

Cook either rice or cilantro lime cauliflower rice. When finished add to the bottom of the bowl.

Add salmon filet & black bean corn salsa to the bowl.

Top with Avocado Cilantro Lime Dressing. Garnish with other desired toppings. Serve & enjoy!
