Line small baking sheet with parchment paper & lay out pretzels so they are spread out in lines across the pan.
Microwave peanut butter for 20 seconds until warm & runny. Spread peanut butter equally across pretzels.
Spread peanuts over the peanut butter/pretzel combination. Let this "set" in refrigerator for 15-20 minutes. (you want it to slightly harden)
Microwave caramel in 30 second intervals until melted, stir every time you take it out to make sure it doesn't burn. If caramel is too thick, add a little coconut oil or water to soften it.
Spread caramel over the peanut/pretzel combination until evenly across the entire tray. Place back in fridge for 45min-1hour to harden.
Once hardened, cut the bars into squares. (you can make them as big or as small as you prefer). Let set again in fridge for 10-15 minutes.
Combine chocolate and coconut oil into a bowl and microwave in 30 second intervals until melted & shiny.
Using a fork, dip the squares into the chocolate coating both sides. Once coated, place back onto parchment paper. Repeat until all squares are coated. Then place back in fridge for 10-20 minutes to harden the chocolate. ENJOY!
