Into large bowl, add pudding powder & milk. Whisk constantly for 2-4 minutes until thick.
Add in 6-10 drops of green food coloring until pudding becomes light green.
Mix in mint extract. Start with 1 tsp and increase amount if need more mint flavor (this is all dependent on your preference).
Add in 1/4 cup chocolate chips. Stir to combine.
Slowly pour pudding mixture into popsicle molds. When all molds are filled, place in freezer for 2-12 hours until frozen.
Once popsicles are frozen remove from freezer. Run under warm water for 30 seconds to remove popsicle from mold.
Into small bowl add remaining 1/4 cup of chocolate chips. Melt in microwave in 30 second intervals until completely melted.
Immediately dip popsicles into melted chocolate and place on wax paper to dry.
Once popsicles are dry you can either place back in freezer for a few minutes or serve immediately. ENJOY!
