The Perfect Vanilla Cupcake

Ingredients

  • 2 1/2 cup cake flour
  • 1 1/2 cup granulated sugar
  • 1 1/4 cup whole milk
  • 3/4 cup unsalted butter, softened
  • 2 tsp vanilla extract
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs

Instructions

  1. Preheat oven to 350 degrees. 

  2. Into a stand mixer add softened butter & sugar. Beat on medium speed until combined. Add in eggs, beat again until mixed.

  3. Add vanilla, baking powder, baking soda, salt & milk. Beat on low speed and slowly add in flour. Beat on high heat for 1 minute until batter is formed.

  4. Line 2 muffin tins with cupcake liners. Add 2 tbsp worth of batter into each liner (it will be almost completely full).

  5. Bake for 20 minutes until cupcakes are spongy & begin to turn golden brown on the edges. 

  6. Remove from oven. Allow to completely cool before adding frosting. Serve & enjoy!
