Copycat Chipotle Cilantro Lime Cauliflower Rice

Ingredients

  • 2 cups cauliflower rice (fresh or frozen)
  • 2 tbsp chopped cilantro
  • 2 tbsp lime juice (aka juice of 1 lime)
  • 1 tsp lime zest
  • 1/2 tsp ground cumin
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp garlic powder

Instructions

  1. Into a non-stick frying pan add 1 tsp of coconut oil. When the oil is heated add cauliflower rice. 

  2. Add in cumin, onion powder, garlic powder & salt. Heat over medium heat for 3-4 minutes until rice is softened. 

  3. When cauliflower is soft turn off heat. 

  4. To the pan add lime juice, lemon zest & cilantro. Stir to combine. Serve & enjoy!
