Grab your food processor (if you don't have a food processor read notes*) and add the entire package of mint oreos.
Pulse oreos for 1-3 minutes until there is nothing left except for an oreo powder.
Cut your cream cheese into 8 cubes and add them into the food processor **
Pulse again until oreo and cream cheese fully combine. It should look like a wet dough at this point.
Place "bowl" into refrigerator for 5 minutes to allow oreo mixture to become firm.
When ready, remove bowl from fridge. Grab either a large spoon or an ice cream scoop & scoop out oreo dough. Using your hands form 1-1 1/2 inch sized oreo truffle balls and place them on a non-stick baking sheet, or place onto parchment paper.
When all oreo truffles are formed, place back into fridge for 5-10 minutes to firm up.
Place your entire package of green chocolate melts into a medium sized bowl.
Heat the melts on low heat in 30 second intervals until completely melted.
Remove oreo truffles from the fridge. Using a fork or spoon, submerge oreo truffle into chocolate until completely coated. Tap utensil on the side of the bowl to remove excess chocolate before placing the truffle back onto the parchment paper/non-stick baking sheet.
Repeat the process until all oreo truffles are coated in chocolate.
Use remaining melted chocolate to drizzle a design over the truffles.
Allow chocolate to fully harden (either air dry or in fridge). When Thin Mint Oreo Truffles are completely hardened, serve & enjoy!
**If you do not own a food processor, no problem!
