More specifically I want a frozen watermelon-lime daiquiri in my hand, but we will get to that in a minute.
We are officially ONE MONTH away from our big summer vacation & I couldn’t be more excited. In June the man & I are traveling to the west coast to catch a San Francisco Giants game & explore the city for a few days before heading on to Hawaii!
Traveling is our favorite thing to do as a couple. Last year we did what I like to call the “party tour” having gone to Las Vegas, New York City & Cancun. This year we tried to plan trips of places we have never been to check off our ever growing travel bucket list. & with Hawaii being so far away from us (a whopping 12 hour travel day) we decided to split up our trip so we could explore an extra city and get adjusted to the time change before delving into all that Hawaii has to offer.
In honor of the constant day dreams I have of sitting with my toes in the sand with a cold drink in my hand, I created this Frozen Watermelon-Lime Daiquiri. I kid you not, it tastes like the beach. It is tropical & tasty without being overly sugary so you can have multiple without getting that sugar stomach ache that comes with sweet drinks.
The best part about this recipe is the fact that besides chopping the watermelon and freezing it, it takes a total of 5 minutes to make.
Helpful hint: depending on how long you freeze your watermelon depends on how thick your drink will be. If you blend it and feel like you need a thicker consistency, just blend in a handful of ice before serving.
This Frozen Watermelon-Lime Daiquri will literally taste like you got transported to a tropical island, palm trees and all. So whether you make it on a sunny day to lay out by the pool or just want to pretend you are on a beach like I do, this drink will satisfy all your beach dreams.
ENJOY!
- 4 cups watermelon chunks, frozen
- 4 tbsp lime juice
- 4 tbsp triple sec
- 1/2 cup light rum

Slice watermelon & cut into cubes. Freeze for at least an hour.

Add watermelon, lime juice, amaretto & rum into blender. Blend until well combined & smooth.

Garnish with watermelon slice & lime. ENJOY!
Woah. These look SO good. I mean, come on, how can you NOT want to sit by the pool and sip on one (or three) of these babies!?
