I don’t think I can remember a 4th of July weekend at the beach without my mom serving up her famous “red white & blue” yogurt parfaits.

There was one fun incident when she sweetly (forced) everyone to have one so we would feel patriotic before heading out to deep sea fish with 8 foot swells. Let’s just say yogurt & high seas didn’t mix well for majority of us on that trip.

But it is the thought that counts, love you mom, and now I can’t have a yogurt parfait without thinking of her. I also have been known to seek out granola and fruit yogurt parfaits when I am traveling.

I have been craving a change up for my breakfast & these make ahead berry yogurt parfaits are DELICIOUS! It is easy to make & it holds well in the fridge overnight so you are good to grab & go the next morning.

Side note on greek yogurt: I looked at EVERY SINGLE yogurt offered at Harris Tetter before purchasing this Chobani flavor. Read the back of labels when buying yogurt, you would be surprised how much added sugar is snuck into “healthy” food.

The key to a good yogurt parfait is to layer yogurt, fruit & granola. It gives each bite a unique taste & crunch!

I ate one of these as a snack after making them & saved the other one for breakfast the next morning. Yogurt parfaits are a great change up from your normal morning routine because they are healthy, are filled with flavor AND they keep you full for hours!

Ingredients
  • 10 oz non-fat plain greek yogurt
  • 1/2 cup granola, homemade or store bought
  • 1/3 cup strawberries
  • 1/4 cup blueberries
Instructions
  1. Cut off tops of strawberries & slice strawberries into large chunks. 

  2. Get out either 2 bowls or 2 glasses to create your parfaits in. 

  3. First add 1/2 of your yogurt between each bowl. 

  4. Next add in 1/2 of your strawberries & then top with 1/2 of your granola. 

  5. Repeat the process with your greek yogurt. Next add in blueberries & top with granola. 

  6. If making for the next morning, make sure you seal parfait well & store in fridge. If you are eating right away, serve & ENJOY! 

Recipe Notes

**You can make this parfait with as many layers as you want.

**Both the greek yogurt & granola will stay good in the fridge overnight, the granola will remain crunchy for about 12 hours.
