Julia, the absolutely legend, definitely knew what she was talking about when she said this. When I was younger, I thought that good food meant tiny portioned fusion art at a 5 star restaurant. As I have aged and cook more for myself, I recognize good food as comfort.
When you sit back from a meal and just feel GOOD, you have made a great meal no matter how fancy it looks. Lets be honest, back in our ramen fave in college, when we could finally afford Hamburger Helper we thought we suddenly were creating magic with every HH box.
Now that I cook 2-4 times a week good food to me means EASY. Any time I can make a deliciously flavored meal in 30 minutes or less without 105838 dishes to do, I have created a masterpiece.
Since I have been on a cajun roll lately & CRAVING vegetables, I decided to combine all my favorite things about good meals together to create this dish. This cajun shrimp & sausage foil pack meal takes 30 minutes tops to cook & is filled with all the best flavors you can imagine.
I mean, those shrimp though! I prefer tail on shrimp, not only for the ascetics, but to me the tail holds flavor while the shrimp cooks in the foil pack.
The key to a good foil pack meal is: leaving room for the cook to steam & cook itself even more. You want to leave just enough room for the steam to envelop all the vegetables & make them soft. The steam pocket also helps the shrimp thoroughly while in the oven.
This recipe will make 3 LARGE foil pack meals.
My man & I were stuffed off of one foil pack each so I would definitely suggest making them smaller or dividing it up into 4 foil packs depending on your family & portion size needs.
These cajun shrimp, sausage & veggie foil packs are no mess, made in 30 minutes or less & FILLED with flavor. You will love being able to through it in the oven after a long day at work & having a perfect meal 15 short minutes later.
Just remember, good meals don’t have to be fancy, they just have to be comfortable & this meal will do just that!
ENJOY your foil pack meal!

- 1/2 lb shrimp, peeled and deveined
- 6 oz sausage, andouille or smoked
- 1 zucchini, medium
- 1 summer squash, medium
- 1/2 onion, large, diced
- 1/2 bell pepper, red
- 1/2 bell pepper, orange
- 2 tbsp olive oil, divided
- 4 tsp cajun seasoning, divided
- 1/4 tsp salt
- 1/2 tsp pepper
- parsley, fresh, minced
- large sheet pan
- aluminum foil

Preheat oven to 400 degrees.

For veggies: cut zucchini & squash into thick coins then in half. Dice bell peppers & onions into large squares.

For sausage, cut into thick coins.

Into medium sized bowl, add 1/2 tbsp olive oil, 1 tsp cajun seasoning & a pinch of salt and pepper. Stir together. Next add shrimp into bowl & toss until all shrimp are coated.

Into a large bowl, add 1.5 tbsp olive oil, 3 tsp cajun seasoning & the rest of the salt & pepper. Stir together. Add in all vegetables and sausage. Mix until all are coated in "seasoning".

Create 3 equal size large aluminum foil squares. Add 1/3 of vegetable mix & 1/3 of shrimp into each square. Fold all 4 sides until sealed (leave a little space so has room to steam.

Place foil packs onto baking sheet & place in oven. Bake for 15 minutes until vegetables are soft & shrimp is cooked through.

Remove foil packs from oven. Allow a few minutes to cool down then carefully open packs to release steam. Serve immediately & enjoy!
Depending on how you feel about reheating shrimp, you can keep in refrigerator for up to 5 days in air tight container.
