While I wasn’t always the biggest advocate for breakfast (I was more of a sleep in & wait until 11 to have lunch kind of girl) I now try to eat it every day. Because, breakfast is the most important meal of the day, duh!
I struggled for years with digestion issues & I quite literally cannot sleep at night if I have a heavy meal on my stomach. So now I eat what I like to call the “grandma diet”aka I eat dinner by 6:00pm every night. Eating a lighter, earlier dinner helps cut those issues drastically.
That quote above has become my new food consumption motto.
Because I don’t always look forward to breakfast, I try to make it fun. This is where my blueberry muffin batter overnight oats came into play. I was looking for a way to make decadent breakfasts without the hassle of having to wake up early to make it. This recipe is not only ridiculously easy to make but it “cooks” itself overnight so when I wake up I can just pour it into a bowl, drizzle fresh berries & honey on top & eat it immediately.
Add your dry products first (oatmeal & sugar) then your wet. This will help ensure that the oatmeal is mixed completely before it sets overnight!
Combine well before you add your oats to a mason jar to set overnight.

For a little extra spice I like to drizzle chia seeds, extra blueberries & agave nectar on top. It gives your overnight oats a little extra crunch & sweetness to enjoy with each bite you take!

- 1 cup almond milk, unsweetened vanilla
- 2/3 cup oatmeal, uncooked
- 2/3 cup blueberries, fresh or frozen
- 1/4 tsp vanilla extract
- 1 tsp sweetener, truvia
- medium sized bowl
- mason jar, medium size
- or airtight container

Into bowl (or jar depending on how many dishes you want to clean) add oatmeal and sugar. Stir to mix them together.

Next add in milk, blueberries & vanilla extract. Stir to combine all ingredients together (or put on jar lid and shake to combine).

Cover bowl (or secure lid) and place in refrigerator overnight. This allows oats to soak in milk and become soft and fluffy.

Remove from fridge, serve & enjoy!
*Makes 1 large portion of overnight oats or two small portions
