If my man was stuck on an island and could only choose one thing to take with him the rest of his life and it was between me or brownies…brownies would win. No competition.

The man lives for some brownies. If there is a whole pan in the room, they won’t last through the night. That being said, we don’t eat brownies very often because our will power is non-existent and we eat enough for 10 people in one setting.

In an effort to limit the amount of brownies we eat at one time, I decided to turn my famous brownie recipe into the best double chocolate brownie skillet I have ever had. The recipe is perfect for a 4″ skillet so it is perfect for one person to eat without being overwhelming!  Add in the fact that the crust is crunchy, the middle is gooey and you have the best brownie of all time!

The key to making this batter work is not over mixing it! Make sure that your egg is at room temperature & once everything is clearly mixed do not keep stirring. The mixture will naturally begin to combine & settle on its own.

Brownie Skillet Baking Tip:

While I love to cook, I hate doing the dishes & especially do not like having to scrub down my cast iron when food gets stuck to it. In effort to scrape less, try using the “baking” cooking spray before adding your batter into the skillet. The flour, spray mixture it contains makes it impossible for the batter to stick to the skillet while cooking!

While the brownie mixture is packed with chocolate, add chocolate chips on top double chocolate overload! The chocolate chips melt immediately when you add the ice cream on top to create a delicious chocolate bite with every spoonful!

Ingredients
Cooking Ingredients
  • 1/2 cup granulated sugar
  • 1/4 cup cocoa powder
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 1/8 cup chocolate chips
  • 1/2 tbsp coconut oil
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt
  • 1 egg (large)
Kitchen Gadgets
  • 4-6 inch cast iron skillet
  • vanilla ice cream, optional
Instructions
  1. Preheat oven to 350 degrees.

  2. Into bowl add sugar, coconut oil & melted butter. Whisk until combined.

  3. Add in egg & vanilla extract. Whisk again until mixed.

  4. Next add in cocoa powder, flour and salt into the bowl. Stir to combine. 

  5. Spray skillet with baking spray. Add in the brownie mix & top with chocolate chips.

  6. Bake skillet in oven for 15 minutes. (I like mine gooey in the middle & crusty edges so 15 minutes worked perfectly for me, go longer if needed!)

  7. Allow skillet to cool. Top with ice cream, serve & enjoy!
