Just when I thought I couldn’t get any more into fall, Pumpkin Spice Waffles happened…
There is nothing in this world (besides ice cream) that my man loves more than waffles. He requests them at least once a month whether that means going to brunch or we make them for brunch. I never thought I would own a waffle maker, let alone make them myself, but it is what it is…I am now the waffle making master.
With #pumpkinspiceeverything in full swing and requests for waffles coming almost weekly, I decided to create the best of both worlds and make Pumpkin Spice Waffles!
While my waffles are hands down the fluffiest, most delicious things in this world, the secret to perfecting this recipe is the Cinnamon Honey Butter you top them with! This is my go-to crowd pleasing butter that goes perfectly with EVERYTHING!

Pumpkin Spice Waffles Tip:
In order to make the fluffiest waffles with crispy edges you want to let you batter sit for 15-20 minutes before cooking. While it may seem tempting to cook immediately, you want to give the ingredients time to integrate as well as allow the baking powder time to rise, thus creating the perfect waffle!
Plus this gives you time to make your Cinnamon Honey Butter!
With 3 simple ingredients you can create the best butter you have ever tasted. Seriously, I get requests for this recipe non-stop. It is a fun spin on regular butter that pairs perfectly with bread, waffles, pancakes & sweet potatoes!
If you think that is a pretty waffle, imagine how good it smells…HEAVENLY!
Don’t forget to smother your waffles in half a gallon of maple syrup before consuming.
If you like the flavor of pumpkin, you will LOVE these pumpkin spice waffles. If you aren’t a huge pumpkin fan, no worries, just remove the spice & puree from the recipe a delicious plain waffle!

- 1 cup all purpose flour
- 3/4 cup milk, warm
- 1/4 cup pumpkin puree
- 1/8 cup brown sugar
- 1/8 cup coconut oil
- 2 tbsp baking powder
- 1 tbsp sugar
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/2 tsp pumpkin spice
- 1 large egg
- 1/4 cup unsalted butter, softened
- 2 tbsp honey
- 1/2 tsp ground cinnamon

When butter has come to room temperature add it to a bowl. Using a spoon stir the butter until smooth.

Add honey & cinnamon to the butter. Mix to combine all ingredients.

When butter is combined, place in the refrigerator to chill until needed.

Into a bowl add all of your "wet" ingredients (coconut oil, pumpkin puree, egg & milk). Mix to combine.

Next add in your brown sugar and granulated sugar. Combine well.

Into a smaller bowl add all purpose flour, salt and baking powder. Using a whisk, sift the ingredients together. After combined, add to the wet ingredients.

Heat up your waffle maker. When ready add between 1/2-3/4 cup of batter to the waffle iron & cook for 3-5 minutes depending on your preference.

Repeat until all waffles are made.

When ready to serve add 1-2 waffles to a plate. Top with cinnamon honey butter & drizzle on desired amount of syrup. ENJOY!
