When life gives you limes, make Cilantro Lime Cauliflower Rice.
I am a lime juice lover. I add it to my beer & water…basically anything acceptable to add lime too. This cauliflower rice is no exception. Both the lime juice & zest aids to create a burst of flavor in every bite you take.
Sauté the rice in a non-stick frying pan for 2-3 minutes to soften.
Add in your cumin, onion powder, salt and garlic powder. Stir & sauté for a few more minutes to allow spices to combine with the rice.
Finally add in lime juice, lime zest & chopped cilantro. Stir & allow everything to marinate for a few minutes before removing from heat.

- 2 cups cauliflower rice (fresh or frozen)
- 2 tbsp chopped cilantro
- 2 tbsp lime juice (aka juice of 1 lime)
- 1 tsp lime zest
- 1/2 tsp ground cumin
- 1/2 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp garlic powder

Into a non-stick frying pan add 1 tsp of coconut oil. When the oil is heated add cauliflower rice.

Add in cumin, onion powder, garlic powder & salt. Heat over medium heat for 3-4 minutes until rice is softened.

When cauliflower is soft turn off heat.

To the pan add lime juice, lemon zest & cilantro. Stir to combine. Serve & enjoy!
