We are officially in Easter week people! This is incredibly crazy to me seeing as it SNOWED yesterday in North Carolina…hopefully this weather gets itself together so that I can actually wear an Easter dress next weekend instead of a sweater & boots!

If you have been following me long enough, you know my love for holiday desserts. I love the opportunity to show my love for my friends & family with an ooey gooey/sweet treat! (Remember last years Easter Chocolate Bark? SO YUMMY!)

We are doing a low key Easter this year so I decided to make something warm & delicious that is perfect for a small group with few leftovers! So say hello to my Small Batch Easter Blondies!

This ooey gooey blonde brownie like dessert is the perfect treat for your crowd & everyone will find themselves going for a second helping immediately after finishing the first.

How to make these easy small batch Easter Blondies:

First, preheat your oven to 375 degrees.

Place your unsalted butter into a medium-large microwave safe bowl. Heat your butter for 30-45 seconds in the microwave until melted.

Next, in the bowl add your brown sugar, salt, vanilla and egg.

Whisk your ingredients together until they are completely incorporated.

Next add in your all purpose flour and baking soda. Whisk everything together until a blondie batter is formed.

Finally, add your easter colored M&Ms. Fold the chocolate into the batter until evenly distributed.

Add your Easter Blondie batter into the pan. Use a silicon spatula to spread the batter out evenly throughout the entire pan.

Bake your Easter Blondies for 20-25 minutes in the oven until the corners are browned & the middle is still soft.  Small Batch Easter Blondies

When your blondies are cooked, remove them from the oven. Allow to cool for 5-10 minutes before cutting. Serve & enjoy!

Ingredients
  • 1 cup all purpose flour
  • 1 cup brown sugar
  • 1/2 cup easter m&m's
  • 1/2 cup unsalted butter
  • 1 1/2 tsp vanilla
  • 1/4 tsp baking powder
  • 1/8 tsp salt
  • 1 large egg
Instructions
  1. Preheat oven to 375 degrees. 

  2. Place butter into medium-large bowl. Heat butter in microwave for 30-45 seconds until completely melted.

  3. Into the bowl, add brown sugar, egg, salt & vanilla extract. 

  4. Mix all ingredients until well incorporated.

  5. Next, add in flour and baking powder.

  6. Combine all ingredients until thick blonde batter is formed.

  7. Add Easter colored M&M's into the bowl. Fold chocolate in until dispersed among batter.

  8. Lightly grease an 8-inch square baking pan & add in blondie batter.

  9. Bake your Easter Blondies for 20-25 minutes until edges are browned & middle is soft.

  10. When blondies are cooked, allow to cool for 5 minutes. Serve & enjoy!
