I mean, I can’t help but agree with Emma in this situation. There is nothing that makes me feel more beautiful than consuming large amounts of ooey gooey grilled cheese sandwiches.

Is there a better day than a day that celebrates our favorite childhood treats? NOPE!
When we were kids, Avery & I used to beg for grilled cheese sandwiches with tomato soup on the side, especially when we were under the weather. It didn’t matter if it was 100 degrees outside, it was the perfect cure-all.
Now at 29, nothing makes me happier on a chilly day than a good grilled cheese. My tomato soup has gone from Campbell’s to homemade and my sandwiches have had a little upgrade too. Instead of plain white bread with Kraft cheese, I have stepped it up a bit with toasty sour dough bread and a blend of colby jack and cheddar cheese to make my sandwiches uber cheesy.
To celebrate National Grilled Cheese Day, I am sharing my favorite Mini Grilled Cheese Sandwiches with you!

How to make the perfect Mini Grilled Cheese Sandwiches:
To start, grab a fresh loaf of sour dough bread. Depending on the width of your loaf, you can either slice 6 small pieces or 3 large pieces of bread then cut each piece in half.
Next, spread mayo onto either both or 1 of the “inside” pieces of your sandwich.
Cut your cheese in half to create smaller slices that will fit perfectly into your mini grilled cheese. Add 1-3 pieces of cheddar and colby jack cheese onto one slice of bread then add the other piece of bread to complete your sandwich.
Next, melt your unsalted butter in a small bowl. When the butter is melted, add in your garlic powder and mix until blended.
Using a silicone brush, spread the garlic butter onto each outside piece of bread.
Turn your stove to medium-high heat and using either a flat plate or non-stick frying pan, place the sandwich on and begin to cook.
When the cheese begins to melt (after 1-2 minutes), flip it and allow the other side to cook.
When both sides are completely crispy & your cheese is melted, remove from heat.
Repeat the process until all of your mini sandwiches are cooked. Serve & enjoy!
Why limit National Grilled Cheese Day to one day? I wouldn’t, these Mini Grilled Cheese Sandwiches are perfect no matter what day it is (especially with a side of tomato soup!)

- 6 slices sour dough bred
- 3-4 slices cheddar cheese
- 3-4 slices colby jack cheese
- 2 tbsp mayonaise
- 1 tbsp unsalted butter
- 1 tsp garlic powder

Slice sour dough bread into 6 thin slices. If larger pieces of bread, slice 3 pieces and cut in half.

Melt butter and mix in garlic powder.

Using a knife, spread mayo onto 3 of the 6 slices of bread.

Cut the cheese slices in half and place 1-2 pieces of each cheese onto the bread.

Top bread to create a sandwich then brush melted garlic butter onto both outer pieces of your sandwich.

Place sandwich into a hot frying pan or flat top so that it can being melting cheese.

Flip the sandwich after 2-3 minutes and repeat until both sides are crispy & cheese is completely melted.

Remove from heat, repeat until all sandwiches are completed. Serve & enjoy!
