Homemade Thin Mints

Ingredients

  • 12 oz milk chocolate chips
  • 1.5 tsp mint extract
  • 1 package oreos
  • 2 tsp coconut oil

Instructions

  1. Separate the oreos chocolate cookies from the creme center. Discard creme centers after removal.

  2. Into a bowl, add 12 oz chocolate chips and coconut oil. Microwave for 1.5 minutes pausing every 30 seconds to stir chocolate. (You want it to have a glossy finish when complete.)

  3. Line a baking sheet with wax paper and set to the side. Next add the mint extract to the chocolate and stir to combine.

  4. Dip the cookies into the chocolate, covering both sides. Once covered place on wax paper to cool. (a fork may be helpful to get cookies flipped & removed from chocolate)

  5. Once all cookies are covered and on baking sheet, place them into the refrigerator for 10-15 minutes to allow time to harden. After they have completely cooled you can serve and enjoy!
