Copycat TB Breakfast Quesadillas

Ingredients

  • 2 tortilla, burrito size
  • 4 eggs, large
  • 4 bacon, slices
  • 1/3 cup cheese, cheddar
  • 1/8 tsp cilantro
  • salt & pepper, to taste

Instructions

  1. Cook bacon. Either by skillet until crispy or in oven at 350 degrees for 15 minutes. Once cooked, break into pieces. 

  2. Into small bowl add eggs. Using fork, whisk them together until yolk is combined. Add salt & pepper to taste.

  3. Heat non-stick pan to medium heat & slowly cook eggs until fluffy. Set aside in bowl once cooked.

  4. Lightly spray non-stick pan with cooking spray (like PAM), set to medium heat.

  5. Into pan, add tortilla. Next add cheese, eggs, cilantro, bacon & top with more cheese. 

  6. Starting at one end of the tortilla, fold sides in creating spiral until all sides folded together & no food can be seen. Flip tortilla onto other side to let the folded side cook.

  7. After 1-2 minutes remove quesadilla from pan, slice in half & serve. Enjoy!

Recipe Notes

You can also make your quesadilla meatless or add any other cooked protein in. Enjoy whatever variation you prefer!
