2-Ingredient Protein Pudding Without Greek Yogurt Recipe

A glass cup of 2-ingredient protein pudding is topped with fresh blackberries, blueberries, raspberries, and red currants

Most high-protein dessert recipes use Greek yogurt for creaminess and protein. The problem is, Greek yogurt changes the flavor profile and can make desserts tangier than you might want.

In this recipe, the instant pudding mix provides the creamy texture thanks to its thickening agents, and the protein powder replaces the yogurt’s protein content without changing the flavor.

I tested this several times with different pudding and protein flavors, and every time it turned out smooth and rich, no chalkiness, no tang. If you pick the right combination of flavors, it tastes like something you’d buy from a dessert shop, but with much better macros.

Equipment

  • Mixing bowl medium
  • Whisk electric mixer optional for extra smoothness
  • Measuring cup
  • Serving cups, jars, or bowls
  • Plastic wrap or lids for storage

Ingredients

  • 1 box Instant pudding mix sugar-free or regular
  • 1 scoop Protein powder
  • 2 cups Cold milk, almond milk, or water
  • Toppings such as berries, chopped nuts, shaved chocolate, or granola optional
  • Pinch of sea salt for enhanced flavor optional

Instructions

  • Pick the Right Protein Powder
    Casein → thicker, custard-like texture.
    Whey → lighter, softer texture.
Blend → balance of thickness and creaminess.
Match flavors (e.g., chocolate pudding + chocolate protein) or keep protein unflavored to let the pudding shine.

  • Combine Dry Ingredients
In a medium mixing bowl, whisk together the instant pudding mix and protein powder until evenly combined. This helps avoid clumps later.
  • Add Liquid and Set the Pudding
Pour in the cold milk, almond milk, or water according to the pudding mix instructions (usually about 2 cups).
Whisk vigorously for 2 minutes until mixture begins to thicken.
Spoon into serving cups or leave in one large bowl.
Cover with plastic wrap or lids and refrigerate for at least 10–15 minutes for soft pudding or 30–60 minutes for a thicker, mousse-like texture.
  • Serve & Store
Top with fruit, nuts, or other toppings if desired.
Store leftovers covered in the fridge for up to 3 days. If it becomes too thick, stir before serving to restore creaminess.

Cooking Tips

  • Use very cold liquid for the creamiest texture.
  • Casein protein works best for a mousse-like consistency.
  • Add a pinch of sea salt to chocolate or caramel flavors to enhance sweetness.
  • If using water, expect a lighter texture — almond milk or dairy milk creates richer results.
  • Experiment with flavor pairings: cheesecake pudding + vanilla protein + strawberries is a crowd favorite.

Why I Keep Making This Recipe

I like that this recipe is:

  • Quick – 5 minutes of hands-on time, no cooking needed.
  • Customizable – endless flavor combinations.
  • High-protein – 15–20g protein per serving.
  • Portable – easy to pack for work or the gym.

It’s become my go-to for evenings when I want something sweet but still want to stick to my nutrition goals. I also make it in small jars so I can grab one from the fridge when I’m in a rush.
