Simple 5-Minute Mediterranean Salad Dressing

I’m pretty awesome at making salad dressings.

Okay, the truth is that I have mastered a few good dressings because I am a pretty basic dressing eater. I make a kick ass ranch (thanks to my Aunt Beth), oil and vinegar (because theres nothing to it) and this mediterranean salad dressing.

I am a go-to greek meal kind of person when I can’t decide what to eat. There is nothing better than throwing protein and veggies together, add a little greek seasoning on top and roasting it to perfection. I also eat Zoe’s Kitchen like its going out of style.

Because I eat so much greek food, I have perfected the art of mediterranean salad dressing. It is simple, delicious & takes 5 minutes to make!

The “hardest” part of this dressing is juicing & zesting the lemon. Once you have accomplished that you quite literally just pour everything else into the jar and voila you have salad dressing!

Where to use this salad dressing:

This mediterranean salad dressing pairs well with a multitude of different things. It can be the topping to a delicious salad, drizzled over cucumbers & feta, the perfect chicken marinate or the base of a pasta salad like this one!

However you choose to use it, I would suggest keeping this mediterranean salad dressing in your fridge for whenever you get a hankering for greek! I promise this dressing won’t disappoint!

Ingredients
  • 1/2 cup olive oil
  • 4 tbsp red wine vinegar
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp greek seasoning
  • 1 tsp oregano
  • 1/4 tsp black pepper
Instructions
  1. Mix all ingredients in a bowl or shaker bottle. Stir/shake to combine.

  2. Allow to chill in refrigerator for 30 minutes before servings. ENJOY!
