Everyone is working for the weekend…and I am over here working for my “cheat meals”.
As has been established many times on the blog, I generally eat healthy during the week but eat pretty much whatever I want on the weekends.
The eating “healthy” portion of my week is mainly because I follow a Nick Saban mentality when it comes to work/home life. If I want to make sure I get my ever growing to-do list done, I don’t want to have to think about what I am going to eat…so I eat almost the exact same thing for my meals Monday-Friday.
As you can imagine that can get boring, so that is why I make fun things on the weekends to eat!
One of those very things is the one I am sharing today: my famous Oven Baked Garlic Parmesan French Fries!
You may remember my extra crispy oven baked fries from last year…imagine those but coated in the most delicious garlic parmesan butter sauce you can imagine. I will go ahead and get you a napkin, because you will be drooling after seeing how beautiful these french fries look!
How to make these simple garlic parmesan french fries:
To start, wash & peel a potato.
After your potato is peeled, slice it into even fries that are about 1/2 inch thick.
Next is the only “time consuming part of the dish” which is when you have to let the potato soak for 30 minutes in cold water (this helps remove excess starch from the fry).
While your potato sticks are in the water, preheat your oven to 400 degrees.
When you potato has finished soaking, drain the bowl & pat your fries with a paper towel to remove excess water/dry them.
Next, add your fries to a bowl.
Add olive oil, salt and pepper to the bowl & toss until all fries are coated.
Place your fries onto a piece of parchment paper/baking sheet.
Spread them out so they are not overlapping (this will help them bake evenly).
Place your baking sheet into the oven and bake for 30 minutes, flipping half way through.
While your fries are baking, it is time to prepare the “garlic parmesan” portion of your fries.
Start by finely shredding 1/3 cup of parmesan & chopping 1 tbsp of fresh parsley.
With less than 5 minutes left on your bake, it is time to melt 1 tbsp of butter in a sauce pan over medium heat. When butter is melted add in 1 tsp of minced garlic. Whisk the two ingredients together until your garlic becomes fragrant.
When your fries are ready, remove them from the oven and place them into a bowl.
Next, pour your butter/garlic mixture over top.
Finally, add the fresh parsley & parmesan.
Toss to evenly coat your fries in all the buttery-garlicy goodness!
When your fries are coated, top with a sprinkle of salt, serve & enjoy!

These oven baked garlic parmesan french fries are the perfect side to any dish or snack for any occasion. Make every day a fry-day with this savory treat!

- 1 russet potato
- 1/3 cup parmesan, grated
- 1 tbsp parsley, diced
- 1 tbsp butter, unsalted
- 1/2 tbsp olive oil
- 1 tsp garlic, minced
- 1/2 tsp salt
- 1/4 tsp pepper
- a pinch of sea salt
- baking sheet
- parchment paper
- small bowl
- frying pan

Preheat oven to 400 degrees.

Wash & peel potato. Cut off the ends to create flat edges. Next cut potato into 1/4 inch strips. Attempt to keep at even as possible so they bake evenly.

Place fry slices in a bowl and cover with cold water. Allow to soak for at least 30 minutes to emit any extra starch.

When fries are soaked, air dry them on a paper towel. Remove all excess water.

After dried, add them to your small bowl. Add in olive oil, salt & pepper. Toss until all fries are coated.

Place parchment paper on baking sheet. Next add your fries, do not let them overlap or bunch together too much or they will not cook properly.

Bake fries for 30 minutes until crispy. Flip them every 10 minutes or so to ensure baked on all sides.

While fries are baking cut & dice your fresh parsley into fine pieces. Also grate your parmesan if not pre-cut.

When there is about 2 minutes left in the baking process, heat your frying pan over medium heat. When begins to warm add in your butter and melt. Next add garlic. Whisk butter and garlic until garlic becomes fragrant (about 1 minute).

After fries are removed from oven place them back into your small bowl. Add in pinch of sea salt, parmesan, parsley & garlic butter. Toss to combine all ingredients.

Place into serving dish or plates. Sprinkle on a little extra parsley & parmesan. Serve & enjoy!

I made these fries to go with NY strips I had. I did have to bake about 10 minutes longer to get the crunch I was looking for, but after that they were perfect. The garlic butter and parm make them extra delicious. Will definitely make again. Thanks for the recipe.
