Grilled Chicken Brussel Sprout Caesar Salad

No matter where I am, especially when I’m on tour around the country, Caesar salad is my standby. In a random city and eating in random to-go restaurants, you’re kind of scared about trying things, but you can always count on Caesar salad.

When I first began eating healthier, I ate A LOT of caesar salad.

I wanted to eat leafy greens but did not like half of the options on the salad menu. Because I was trying my best not to get a salad with fried EVERYTHING on top (which is what I really wanted), I picked the Caesar.

Since then I have explored A LOT of salads. 99% of my salads are now filled with spinach, feta, lots of veggies & a vinaigrette dressing. But Caesar will always be the staple.

I recently fell in love with using brussel sprouts as a salad base (like with my BLT chopped salad) and decided to try it with a new salad.

How to make the BEST grilled chicken for your caesar salad:

Lets talk about the chicken. While I normally like blackened chicken with my Caesar salad, I mixed up a fun new seasoning that was incredibly flavorful.

It combines oregano, thyme, onion salt, garlic powder & pepper. It has just enough seasoning to taste it with every bite & is simple enough you can make it in 2 minutes (no marination needed)!

Allow to rest before cutting so that your chicken will be easier to slice.

Pre-Cut vs. Whole Brussel Sprouts:

While the last salad was made with pre-cut brussels, this time I shredded them myself. It takes a whopping 5 extra minutes and you get 3x the amount of brussels for the same price as the pre-packaged sprouts!

Parmesan Shaving Tip:

Make sure your parmesan gets to “room-ish” temperature before attempting to cut it so that it will peel in long ribbons.

Like the BLT brussel sprout salad, this salad holds its flavor for multiple hours. The brussel sprouts do not wilt even when coated with caesar dressing, even overnight, and still holds its crunch!

Whether you decide to make it ahead of time or whip it up quickly for a healthy dinner, you will not want to stop eating this delicious caesar salad!

Ingredients
Salad Ingredients
  • 1 lb brussel sprouts, shredded
  • 1/2 lb chicken breasts (2 large breasts)
  • 1/4 cup caesar dressing**
  • 1/8 cup parmesan cheese, shaved
  • salt & pepper, for taste
Chicken Seasoning Ingredients
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1/2 tsp garlic powder
  • 1/4 tsp onion salt
  • 1/8 tsp pepper
Instructions
  1. Regardless of if using whole or shredded brussels make sure to rinse them in cold water. Allow to dry on a paper towel while you prepare your chicken.

  2. In a small bowl, combine oregano, thyme, garlic powder, onion salt and pepper. Mix together to create seasoning.

  3. Onto chicken breasts, sprinkle seasoning on both sides until chicken is heavily seasoned.

  4. Into a frying pan over medium heat, cook breasts. Allow for both sides to be cooked evenly (about 5 minutes on each side). When finished, place on plate or cutting board to rest while you finish the rest of the meal.

  5. Prep your brussel sprouts. If you are using whole brussels: chop off the ends of the sprouts, cut in half then thinly slice to create shredded sprouts. When complete, add them to your bowl. 

    If using pre-shredded sprouts: add immediately to bowl.

  6. Using a potato/vegetable peeler, shave your parmesan wedge. Add shavings to your salad bowl. (If using pre-shredded parmesan just add to bowl).

  7. Slice your chicken breasts in medium-thick pieces. Add chicken to salad.

  8. Finally add your caesar dressing to the bowl. Toss until everything is evenly coated. (use a little more than suggested if like salad heavily coated).

  9. Season with a little salt and pepper. Serve & enjoy!
